Haute Pig
The Haute Pig is Madison town’s uppity version of Jackson’s HIckory Pit, across the street from the uppity Wal-Mart right off Interstate I-55. No, it’s not oat-pig; it’s pronounced “haughty” with a strong southern twang. Get it right. Owner Ginger Watkins brings the same popular barbecue and desserts that have won the Jackson restaurant several Best of Jackson awards.
